Low Tide Poke started with two friends and a good idea. Ryan and Luke met in high school and bonded over shared interests. During a summer trip to West Palm Beach, Florida, they discovered poke bowls: fresh, healthy, customizable, and full of flavor.
That first taste sparked a question: why didn’t they have this anywhere near them? Back at the University of Alabama, the idea took shape from a business class project. What started as an assignment quickly turned into a serious plan.
While still students, they launched Low Tide Poke as a food truck on campus. The response was immediate. Students and faculty made it a regular stop, and demand grew. Soon, they added a storefront at the University of Alabama to keep up. Today, Low Tide Poke is focused on expanding to new campuses, still serving clean, quick, and fully customizable meals that leave people feeling good.
